Macaroni cheese is one of my favourite recipes! It is such a comforting, home cooked meal and becoming coeliac hasn’t changed this! Personally, my favourite brand of pasta to use is the Tesco one as it holds its shape and doesn’t taste gluten-free. My recipe makes about four portions. Keep reading to learn my recipe!
Ingredients:
400g Gluten-Free Pasta.
200g Mature Cheddar Cheese, Grated.
Two Tablespoons Salted Butter.
One Teaspoon Garlic Powder.
One Teaspoon Mustard Power.
Three Tablespoons of Plain Flour.
500ml Milk.
A Tin of Sweetcorn.
200g Peas.
Method:
1. Grate cheese if you haven’t already done so.
2. Put on water to boil and cook your pasta according to the packet instructions.
3. Preheat oven to 200 degrees fan.
4. Melt butter in the pan with garlic powder and mustard powder.
5. Once melted, whisk in flour until it forms a paste.
6. Gradually add in the milk whisking after each addition until it thickens.
7. Once thickened, stir in the cheese until melted.
8. Stir in peas and sweetcorn.
9. Once combined, add pasta into the sauce and mix together.
10. Put into an oven proof dish and top with leftover cheese if you fancy it.
11. Bake in the oven for 20-25 minutes.
12. Eat and enjoy!
